If you like cheesecake, then you will LOVE these cupcakes! I made them last night and they are delicious! It’s like little bites of heaven in my mouth! I gave one to Aviana this morning and she kept nodding her head saying “good, good”.
These cheesecake cupcakes are the perfect 4th of July treat and are so yummy!
-1/4 cup of sugar
-1 tsp vanilla
-1 tbsp flour
-8 oz cream cheese
-6 oz vanilla Greek yogurt
-2 large egg whites
-12 vanilla wafers
-Line the cupcake pan with liners
-Place a vanilla wafer at the bottom of each liner
-Preheat oven to 350 degrees
-In a mixing bowl, gently whisk together the sugar, vanilla, and cream cheese
-Pour in the flour, Greek yogurt and egg whites and stir until well blended
-Pour mixture in to cupcake liners filling half way
-Bake 20-23 minutes (center should still jiggle a little)
-Remove from oven and allow to cool at room temperature for an hour
-Transfer to refrigerator and chill for 2 hours
-Before serving, top with strawberries and blueberries
